Salmon Poke Bowl

Preparation Time

Ingredients

  • Quinoa boiled
  • Big Sam’s Japanese Edamame steamed
  • Big Sam’s Hass Avocados diced
  • Cucumber diced
  • Spring onions (green) finely chopped
  • Big Sam’s Orange Tobiko
  • Sesame seeds – toasted

 

Serving Suggestion:

  • Big Sam’s Fresh Salmon Poke Cubes (sub Marinated Fresh Salmon Poke Cubes for premarinated)
  • Big Sam’s Kokuho rice (sub quinoa for gluten free option)
  • Big Sam’s Japanese Edamame
  • Big Sam’s Hass Avocados
  • Cucumber and/or Carrot
  • Spring onions (green) finely chopped
  • Big Sam’s Orange Tobiko or Japanese Ikura
  • Sesame seeds – toasted
  • For dressing: soya sauce (sub tamari or coconut aminos), lightly toasted sesame oil, ginger, garlic and fresh chillis.

Method

  • Cook rice or quinoa
  • Steam the edamame and let it rest
  • Make a dressing with soya sauce (sub tamari or coconut aminos), sesame oil, ginger and garlic paste and add some fresh chillis or sriracha for spice – set aside
  • Cut/dice your chosen vegetables
  • Plate as preferred and serve
